Chocolate Dipped Bacon Skewers
with Crushed Macadamia Nuts

Recipe makes 8 skewers
8 Thick Cut Bacon Slices
8 Skewers
3 oz. bar Dark Chocolate, chopped
2 Tb Macadamia Nuts, finely chopped in the food processor
Preheat the oven to 400F convection. Have ready a baking pan with a wire rack or roasting rack set inside.
Thread a piece of bacon onto each skewer making a wavy pattern with the bacon. Arrange the bacon skewers on the rack in the baking pan, the bacon should not be touching the pan but suspended above it on the rack. Bake the bacon for 20 to 25 minutes, turning the skewers over half way through the cooking time, until the bacon is crispy. Remove the pan from the oven and transfer the bacon still on the rack to a clean surface where it can cool. The bacon fat that has accumulated in the bottom of the pan and can be poured into a glass container and used for cooking or in sauces; keep it refrigerated until needed for that use.
Prepare a double boiler setup and place the chocolate in the top container. Heat the water in the base pot just to a simmer; melt the chocolate over this water bath until smooth. Use a pastry brush to paint the warm chocolate onto the cooled crispy bacon. Sprinkle the chopped macadamia nuts over the bacon while the chocolate is still warm. Once the chocolate is set these skewers should be enjoyed with in the next few hours for best results.
