Dark Chocolate + Goat Cheese Custard

Recipe makes 6 to 8 portions


Ingredients + Cooking

½ cup Heavy Cream

3 oz. Semi Sweet Chocolate (54% to 72% Cocoa)

2 tsp. Orange Zest, optional

12 oz. Goat Cheese

4 Eggs, beaten

¾ cup Sugar

Selection of Fresh Fruit such as Pineapple, Berries, Plums, Pears or Figs

 

Heat the cream over medium heat until it comes to a simmer.  Place the chocolate in a heat proof bowl and pour the hot cream over it; let chocolate sit for about 5 minutes.  Whisk the chocolate and cream until smooth, this makes chocolate ganache. 

Place the goat cheese, and orange zest if using, in a medium saucepan and place over medium heat.  Add the chocolate ganache and whisk the mixture until melted and smooth.  Remove pan from the heat.

In a clean bowl whisk the eggs with the sugar.  Slowly whisk the goat cheese & chocolate mixture into the egg mixture. 

Preheat the oven to 325F Non-Convection. Divide custard between ovenproof ramekins.  Place the ramekins in a baking dish, arrange the ramekins so there is plenty of space between each. Transfer the baking dish to the oven.  Bake the custard for 14 to 20 minutes until set in the center.  Remove from the oven and allow the ramekins to cool then remove from the water bath.  Serve warm or chilled with fresh fruit on top.
