Ulu (Bread Fruit) + Green Beans with Macadamia Nuts

Ingredients + Cooking
2 Sweet Onions, thinly sliced
2 tsp. Granulated Garlic
1 tsp. Ancho Chile Powder
2 tsp. Smoked Paprika
1 tsp. Sea Salt
1 pound Ulu, peeled and parcooked (can purchase Ulu Coop frozen product), medium diced
1 cup Vegetable Broth
Zest & Juice of 2 Oranges
¼ cup Garlic Chives, thinly sliced
1 pound Green Beans (or Snake Beans!) ends trimmed, cut into bite size pieces, steamed till tender
3 oz. Macadamia Nuts, chopped
In a wide, deep stock pot, heat coconut oil to generously coat the bottom of the pan. Add the onions and sauté until deeply browned and caramelized. Stir in the garlic, chile, paprika and salt; sauté for 30 seconds until the spices are very fragrant. Stir in the ulu and vegetable broth, cover the pot and reduce the heat to low. Simmer the ulu for 1 to 3 minutes until most of the liquid is absorbed and the ulu is very tender. Do not over cook the ulu, or you will get a ulu mash, which of course can work too if that is appealing to the cook!
Remove the pan from the heat and stir in the orange zest and juice, and the garlic chives. Season the mixture with more sea salt as needed, and season lightly with pepper if desired. Transfer the mixture to a serving dish, top with the green beans and macadamia nuts.
